Chocolate Gingerbread Loaf
Why I Love This Recipe
My friend Mark makes this for us when we study together. It's warm and chocolately and makes up for the fact that we have a big exam coming up!
Ingredients You'll Need
2 1/2 cups ap flour
1/2c cocoa powder
1t baking soda
1/2 t salt
1 1/2 t ground ginger
1 t cinnamon
1/2 t allspice
1/4 ground cloves
1/4 nutmeg
1/4 t ground pepper
12oz semisweet chocolate chips
3/4c butter at room temp
1 1/4 c sugar
1 t vanilla
2 large eggs
1 c dark molasses
1 c hot water
Directions
Preheat the oven to 350F
Butter and flour a loaf pan
Whisk together flour and everything up to (but not including) the choc chips in a med bowl.
Beat the butter, sugar, and vanilla on med-high in a large bowl for about 3 min (until light and fluffy). Reduce to medium and add the eggs one at a time.
Whisk together the molasses and hot water, then add 1/3 of the flour and 1/3 the molasses/water to the bowl with the butter and sugar.
Beat on low until just blended, repeat until all flour and molasses water is added.
Fold in the chocolate chips.
Pour in pan.
Bake for 55-60 min, until the cake begins to pull away from the sides and is firm to the touch (I poke the deep center with a toothpick to make sure the middle is done).
Cool for 20 minutes.
Remove from pan.
