Pasta with Butternut Squash and Italian Sausage

Why I Love This Recipe
One of Grandma's favorite foods was butternut squash. Dad's parents lived in southern Alabama and had an enormous garden full of good things. I spent many enjoyable hours helping Grandpa pick the food and Grandma cook it. She always did her butternut squash by cutting it in half then baking with butter and cinnamon. She kept an extra freezer in the spare bedroom full of all sorts of garden goodies and there must have been an entire shelf for the butternut squash
Ingredients You'll Need
1 pound Italian sausage
1 small sweet onion, diced
1 butternut squash, peeled, seeded and cubed
1/2 teaspoon crushed red pepper flakes
salt, to taste
1/2 cup chicken broth
1/4 cup cream
1/2 cup chopped fresh parsley
1 pound hot cooked linguine
Directions
Brown the sausage on all sides until nearly cooked through. Slice and set aside. Add the onion to the pan over medium-low heat and cook until it begins to soften. Add the butternut squash, red pepper flakes, salt and chicken broth. Cover and cook 5 minutes or until the squash begins to soften. Stir in the cream, reserved sausage and most of the parsley and cook until the squash reaches desired tenderness. Serve over hot pasta topped with remaining parsley and some freshly grated Parmesan cheese.
