PORK TENDERLOIN

Why I Love This Recipe
OPTIONAL:
Pour drippings and onions blender. Process a few seconds, until smooth. Pour into sauce pan.
In cup, stir together 1 to 2 Tablespoons corn starch and 1/4 cup cold water. Add to drippings.
Cook over medium heat, stirring constantly, until mixture boils. Lower heat and cook for 3 to 4 minutes.
Add additional liquid, if needed. Season to taste. Great over potatoes, pasta, or rice.
VARIATIONS are endless. Use your favorite seasoning combinations.
Ingredients You'll Need
Onion(s), sliced approximately 1/4-inch thick
1 - 11 ounce package pork tenderloin
Mesquite seasoning
1/2 cup water OR coffee
Pork Tenderloin
Directions
Slice onion and place slices in baking pan.
Lay tenderloin on top of onion slices.
Sprinkle with mesquite seasoning.
Pour water or coffee around tenderloin.
Bake at 350 degrees for 35 to 45 minutes, until internal temperature reaches 160 degrees.
Remove from oven and let meat rest for 10 minutes before slicing.
