24 Hour Slaw

Why I Love This Recipe
We are into the 4th generation of my family with this recipe. This is a very different cole slaw from the kind you typically see made with mayonaisse or a mayonaisse type of slaw dressing. I think if you try it, you will like it. We make this and the traditional mayonaisse based cole slaw in our family depending on our mood.
Ingredients You'll Need
2 pounds cabbage
1 carrot
1/2 onion
1/2 tsp salt
1/2 tsp celery seed
1/8 tsp pepper
3/4 cups sugar
1/2 cup vinegar
1 1/2 tsp unflavored gelatin
1/4 cup cool water
1/4 cup salad oil
Directions
Grate and weigh down the cabbage, carrot, and onion. Drain for 1 hour. Add salt, celery seed, and pepper.
Heat to boiling point (do not boil) the sugar and vinegar.
Mix and let stand the unflavored gelatin and water.
After sugar and vinegar mixture is cool, add the gelatin mix. Then add the salad oil. Mix and pour over the vegetables. Mix thoroughly.
