Annie's Lemon Pudding

Why I Love This Recipe
We have a lemon tree that is very productive just at the cold season is coming upon us. This recipe makes enough to fill 8 ramkins which is good for us to have the vitamin C and a small dessert.
This is an easy recipe which produces just enough tasty dessert as the cold season comes upon us.
Ingredients You'll Need
3 eggs
1/2 cup corn starch
2 cups Splenda
3 cups water
1 cup fresh lemon juice
1 tablespoon lemon zest
Directions
Combine the first 4 ingredients in a medium size pan and use a wisk to stir as it thickens using medium heat. After it thickens add the lemon juice and lemon zest and remove from the heat as it is wixked in.
Place a gingersnap on the bottom of each ramkin. Fill each ramkin with the pudding. Crumble 4 gingersnaps over the puddings. Good warm or cold.
Makes 8 ramkins. Cover each if it is to be stored in the refrigerator before eating.
