Apple Pancake
Why I Love This Recipe
Ingredients You'll Need
                                     1 apple, any flavor
                    
                                     4 T. butter
                    
                                     2 T. sugar
                    
                                     1/4 t. cinnamon
                    
                                     1/4 t. nutmeg, optional
                    
                                     1 c. Bisquick
                    
                                     2/3 c. milk
                    
                                     1 egg
                    
                                     1 T. sugar
                    
                               
Directions
Core apple, but do not peel. Cut into 12 slices. Melt butter in a 9-inch iron skillet. Stir in cinnamon, 2 tablespoons sugar and apple slices; sauté until tender. Combine Bisquick, milk, egg and 1-tablespoon sugar until just moistened. Pour over apple slices. Turn heat to low and cook 10 minutes until surface of pancake looks dull. Place under broiler for a couple of minutes until lightly browned. To serve, turn upside down on plate and pass extra butter and syrup.
Serves 2-4
