Breakfast Hushpuppies

Why I Love This Recipe
This is a combination of a beignet, hushpuppy, waffle, and a pancake. What's more, you can eat it with your fingers and they are easy to make. They are crunchy on the outside and soft on the inside.
Ingredients You'll Need
1/2 cup milk
1 large egg -- beaten
2 tablespoons butter -- melted
1 cup all-purpose flour
1 tablespoon sugar
3/4 tablespoon baking powder
1/2 teaspoon salt
1/8 teaspoon mace
Oil for frying

This is a combination of a beignet, hushpuppy, waffle, and a pancake. What's more, you can eat it with your fingers and they are easy to make. They are crunchy on the outside and soft on the inside.
1/2 cup milk
1 large egg -- beaten
2 tablespoons butter -- melted
1 cup all-purpose flour
1 tablespoon sugar
3/4 tablespoon baking powder
1/2 teaspoon salt
1/8 teaspoon mace
Mix the milk, beaten egg, and melted butter in a small bowl (the butter makes the dough easier to slide from the spoon). In a separate bowl, combine the flour, sugar, baking powder, mace, and salt and mix thoroughly. Add the dry ingredients to the milk mixture and stir. It will make a rather thick batter. Using a small pot, the one I used was 6". Add about 3/4" of oil and bring to a temperature of 350 degrees.
When the oil has come up to temperature, use a teaspoon and a finger and "scoop and push" batter into the hot oil. Fry for about 1 1/2 minutes and then flip over. When they are toasty brown on both sides you should transfer to a plate with a paper towel to drain.
Serve sprinkled with powdered sugar with syrup or honey on the side. Makes about 2 dozen.
