Broccoli Cheese Cornbread
                      Why I Love This Recipe
My Mother gave me this recipe. I don't know where she got it. I've seen other versions, but only she seemed to add the cheddar cheese and onion. It works well as a type of bread, or as a side dish. You get your vegetables, eggs, bread and cheese all in one.
Ingredients You'll Need
                                     1 Jiffy cornmuffin mix 
                    
                                     1 10 oz. pkg. frozen chopped broccoli, thawed
                    
                                     1 small onion, diced
                    
                                     4 eggs, slightly beaten
                    
                                     3/4 cup small curd cottage cheese
                    
                                     1/2 cup shredded mild cheddar cheese
                    
                                     1/2 teaspoon salt
                    
                               
Directions
Mix broccoli, onion, eggs, cottage cheese, cheddar cheese and salt.
Add corn muffin mix and mix well.
Spray a 11 x 8" dish with cooking spray and bake for 35 minutes at 375 degrees F.
