Canadian Bacon, Pepperoni, & Cheese Calzones

Ingredients You'll Need
1 package pizza dough
OR USE THIS RECIPE:
For Homemade Dough
2 1/2 cups all-purpose flour
1 package dry yeast
1 teaspoon dried sage -- crushed
1/2 teaspoon salt
3/4 cup warm water -- 115 degrees
2 tablespoons cooking oil
For the Fillings:
1 1/2 cups shredded mozzarella cheese -- more if desired
1/3 pound pepperoni sausage -- chopped in small pieces
1/3 pound Canadian bacon -- chopped in small pieces
1 small tomato -- peeled seeded chop
1/3 cup Parmesan cheese
1 each egg
1 tablespoon water
Directions
If making homemade dough: In large mixer bowl combine 1 cup flour, the yeast, sage, and salt. Add warm water and oil. Beat with an electric mixer on low speed for ½ minute. Beat on high speed for 3 minutes. Stir in as much of the remaining flour as you can. On a floured surface, knead in enough remaining flour to make a moderately stiff dough that is smooth and elastic (6-8 minutes total). Place in a greased bowl; turn once. Cover, let rise in a warm place till
double (45-55 minutes).
FILLING: Meanwhile, make filling. In a bowl toss together the shredded mozzarella cheese, chopped pepperoni, chopped Canadian bacon, chopped tomato, and grated Parmesan cheese. Set the filling aside. Punch dough down; divide into 6 pieces. Cover, let dough rest 10 minutes.
