Cheese, Rice and Cold Tomato
                      Why I Love This Recipe
This was one of the first recipes I ever learned - It is so good and very easy. Toss in some black beans for added protein.
Ingredients You'll Need
                                     1 cup cooked rice, hot
                    
                                     3/4 cup shredded cheese
                    
                                     1/2 cup diced tomato, refrigerated
                    
                                     oregano
                    
                                     salt
                    
                                     pepper
                    
                               
Directions
Alternatives: Any fresh herbs - basil, thyme, etc.
Black Beans for protein - go easy or you'll end up with plain old rice n beans.
