Cheesey Macaroni Bake

Why I Love This Recipe
Ingredients You'll Need
1 lb frozen broccoli florets
1 lb chicken breast/tenders
1 tbsp olive oil
.5 tsp Cayenne pepper
Salt and Pepper
1 lb frozen hash browns
1 bag frozen onion
1 lb macaroni
1-2 Cheese sauce recipe (depends on your preference. You could smother it or have it a bit dry)
.5 cup bread crumbs
1 cup 2% or ReducedFat shredded cheddar cheese
Cheese sauce
3 tbsp margarine
5 tbsp flour
2.5 cups of skim milk
1.5 cups 2% or ReducedFat shredded cheddar cheese
pinch (I used .5 tsp or more) Cayenne pepper
Directions
Cook the chicken in a tbsp of olive oil and season with salt, peper and cayenne until golden brown. Remove chicken from pan and cut up into bite-size (or smaller) pieces.
In the same pan that the chicken was cooked in, cook the onion, hashbrowns and broccoli until unfrozen and slightly warm.
Prepare Macaroni as instructed.
Prepare the cheese sauce as above.
In a large mixing bowl, combine the chicken, hashbrown mixture, macaroni and cheese sauce.
Pour into large oven-proof dish.
Sprinkle with bread crumbs and cheese.
You can broil this for a couple of minutes until it turns brown or you can bake anywhere from 350 to 425 until it turns brown - anywhere from 15-30 minutes. (I have had a bad experience with my broiler, so I just bake :D)
