Chocolate Brownies

Why I Love This Recipe
Ingredients You'll Need
25cm (or similar sized) square baking tin lined on the bottom
150g dark chocolate (that's 70% cocoa stuff)
150g butter
300g caster sugar
2 eggs
good pinch of salt
half a teaspoon of baking powder
100g flour
Directions
Melt 150g dark chocolate (that's 70% cocoa stuff) with 150g butter over a saucepan of barely simmering water.
Meanwhile beat 300g caster sugar with 2 eggs until thickish, then add a good pinch of salt, half a teaspoon of baking powder and 100g flour. Beat all of this together - you don't have to be gentle with the recipe - then add the melted chocolate.
At this point I like to add a chopped up bar of white chocolate (at least 100g) but you may prefer roasted nuts, dried cherries, other types of chopped up chocolate bar...whatever takes your fancy really.
Pour the whole lot into the baking tin and cook for 20-30 minutes at 180 C (a moderate over I guess). How long you bake them depends on how gooey you like your brownies.

Let them cool in the tin for a few minutes - expect them to sink a bit in the middle, the top will crack too - then cut them into squares while they are still warm.
