Christmas Pudding from Bermuda
Why I Love This Recipe
If you have never been to Bermuda especially those of you who live in the Midwest or Eastern part of the country what are you waiting for, because Bermuda is a short flight from the Eastern states. Christmas in the beautiful islands of Bermuda is not complete without the traditional Christmas pudding.
Ingredients You'll Need
1½ cups shortening
1½ cups light brown sugar
4 eggs
6 cups bread crumbs
2 cups raisins
2 cups mixed peel
½ cup cherries
2 cups rum
½ teaspoon baking soda
1 teaspoon salt
¼ teaspoon Allspice
1 Tablespoon cinnamon
Directions
Cream shortening and sugar.
Add beaten eggs and all other ingredients. Mix well
Steam in a pudding mold for 6 hours and serve with lemon sauce.
