Coffee Cake
Why I Love This Recipe
Ingredients You'll Need
2-1/2 cups all purpose flour
2 cups brown sugar
1/2 teaspoon salt
2/3 cup shortening
2 teaspoons baking powder
1/2 teaspoon cinnamon
1/2 teaspoon nutmeg
1/2 teaspoon baking soda
1 cup buttermilk (or sour milk, see Note)
2 eggs, well-beaten
Directions
* Note: If you don't have buttermilk, make sour milk by placing 1 teaspoon vinegar or lemon juice in a 1 cup measure, then filling with milk. Stir to blend. Allow to stand 5 minutes until milk thickens. Proceed with recipe.
Measure flour, brown sugar, salt and shortening into mixing bowl and blend until fine crumbs form. Remove 1/2 cup of crumb mixture for topping.
To the remaining crumbs, sift in baking powder, spices, and baking soda, mixing thoroughly with crumbs.
Add eggs and milk, blending until very smooth. Grease 2 pie pans, or 8" round or square cake pans, and spread half of batter in each pan. Sprinkle each with half the reserved crumbs, adding additional cinnamon if you like it.
Bake at 375 degrees for 15-20 minutes.
Serve right from the pan.
