Creamless Cream of Broccoli Soup

Why I Love This Recipe
This was originally from Martha Stewart but I've sort of made it my own and use it for just about everything now. I love basic recipes that I can alter to make a million different things and this is definitely one of them!
Ingredients You'll Need
Broccoli (a good amount-depends on # of people)-smallish chop
chopped onion-one medium
a little garlic chopped
olive oil or butter to cover bottom of the pam
stock-chicken or veggie for vegetarian, enough to cover the broc.
S and P
cayenne to taste
oatmeal-about a handful
Directions
soften the onions and garlic in the oil, add the broccoli, sort of brown it a little, cover with stock and bring to a boil. reduce heat and simmer, adding the oatmeal. season to taste. cook until most of the liquid is gone. liquify in blender in small batches (hot!). I like it served hot but cold could be just as good.
seriously, this soup is so simple and flavorful, garnish however you like, you could add some yogurt or sour cream on top and not feel guilty since there's very little other fat in it.
THEN, once you've tried this out the real fun comes: playing with it!

-mushroom and rosemary
-tomato and basil
etc.
serving dishes:
-margarita glasses
-teacups
-hollowed out squashes
garnish:
-parmesan curls
-proscuitto rosettes
-mint ribbons for the mushroom (you'll be surprised!)
