Dad's Chicken Paprikash

Why I Love This Recipe
My Dad was a wonderful cook and he never gave away his recipes, but my brother and I would watch him cook and he sometimes turned his back while he put in a special ingredient. We loved everthing he made and this is one of the best. Dad passed away in 1995 and my best memory is of Mom and I preparing Thanksgiving without his presence and missing hiim so very much. I added the Spatzels to complete the meal
Ingredients You'll Need
Dad's Chicken Paprikash and Spatzels
4 boneless skinnless chicken breasts and thighs
2 T oil
5 medium onions sliced
2 T paprika
salt and pepper
2 cups chicken stock
1 cup half and half
2 T flour
1 cup sour cream
Spatzels
2 cups flour
1 tsp. salt
2 eggs beaten
1/2 cup to 1 cup evaported milk
2 qt. sauce pan 3/4 filled with water
Directions
Saute chicken pieces until golden brown, remove from pan add onions cooking until onions are transparent add the paprika and salt and pepper and chicken stock and milk, return chicken pieces, cover and simmer about 1 hour add more liquid if needed. Stir flour into sour cream and add slowl to the pot, simmer until thick stirring constantly . Serve with spatzels adjust seasoning if needed.
\Spatzels
stir dry ingredients add beaten eggs and milk to make a heavy dough. Dropo into boiing salted wwater by 1.2 tsp.s when they come to the top of the pan and float, remove with sloted spoon. Serves with the chicken paprikash
