Dad's Non Kosher Potato Latkes

Why I Love This Recipe
My family loves these latkes but I warn you they are not "traditional" so for those who are kosher I would skip this one as a key ingredient is bacon. This is what makes these latkes extra tasty though so if you can, don't skip it! These are great on their own or with applesauce.
Ingredients You'll Need
3 Potatoes (grated)
1 Yellow onion (chopped)
1 Egg
3 slices of bacon
2-3 Tablespoons of flour
2 teaspoons of garlic salt
2-3 tablespoons cooking oil
Directions
Cook the 3 slices of bacon in a medium skillet, drain on paper towel and reserve. Leave the bacon fat in the pan.
Wash and grate the potatoes (peeled or un-peeled, whatever your preference)let them sit a few minutes and then squeeze to drain excess liquid. Add the chopped onion, the egg, salt and flour. Crumble Bacon into mixture and if you find the mixture too liquidy add more flour, if it is too dry or not holding together add another egg.
Heat the reserved bacon fat over medium heat adding the few tablespoons of oil. Using your hands or a large spoon scoop some of potato mixture and place in oil flattening to create a pancake. Cook each latke until it is brown, about 5 minutes on each side, reduce heat if they are cooking too quickly.
It should produce about 6-8 latkes. Enjoy!
