Why I Love This Recipe

This came from my neighbor,Barb Walker, and she was kind enough to share it with me.

Delicious on hot days.

You have double textures of blueberries-the crunch of the fresh with the cooked berries. Yummy!

1 tablespoon lemon juice
3 tablespoons cornstarch
1/8 tsp. salt
1/4 cup water
Cool Whip

Directions

Bake pie shell and let cool.

Place 2 cups fresh (uncooked) berries in bottom of pie shell.

In saucepan, add sugar, cornstarch and salt and mix together.

Add water and the other 2 cups of berries.

Cook over medium heat -stir constantly until

mixture comes to boil and is thick and clear.(Will be quite thick)

Remove from heat and stir in butter and lemon juice.

Cool slightly.

Pour cooked mixture over uncooked blueberries in shell & refrigerate.

Top with Cool Whip.
