Dressing Chicken Pie

Why I Love This Recipe
I had no idea what to have for dinner tonight, so I went to my pantry and freezer and came up with this recipe. I have a Wilton scalloped, oval, stoneware pie plate, and I used it for this recipe. It turned out beautiful. DH actually had two servings!
Ingredients You'll Need
3/4 cup water
1/2 stick butter
1 medium onion, chopped
2 ribs celery, diced
6-8 chicken tenders
1 can cream of celery soup
1 box Stove Top Dressing
salt, to taste
pepper, to taste
1 pkg (1 lb) frozen mixed vegetables
1 can cream of chicken soup
1/2 cup sour cream
salt, to taste
pepper, to taste
Directions
Combine water, butter, onion, celery, and chicken. Cook on top of stove until chicken, celery, and onion are done. Add salt and pepper to taste.
Remove chicken from pot and set aside to cool.
Add cream of celery soup. Add Stove Top stuffing dry stuffing packet. Mix well. If not moist enough, add a little water.
Spoon stuffing into a baking dish. Press it across the bottom and up the sides of the baking dish.
Bake at 350 degrees until it starts to brown.
Meanwhile, cut the chicken into chunks. Add the frozen vegetables, cream of chicken soup, sour cream, and the salt and pepper to taste. Cook this mixture in the microwave until vegetables are done and mixture is hot.
Pour the hot vegetable/chicken mixture into the dressing shell. Either serve immediately or put back into the oven for 5-10 minutes prior to serving. Cut into slices like a pie.
NOTE: You could sprinkle shredded cheese on the top if desired.
