Easy Rocky Road Cookie Mix Bars

Why I Love This Recipe

OK, before I became a working mother I would never, ever have considered using a box mix for anything. But, I was in a pinch one day and had to make snack for my son's soccer team so I had to get creative on the fly with very little time to spare. These are surprisingly good, in fact, you may even forget you used a mix.


Ingredients You'll Need

1 pouch Betty Crocker double chocolate chunk cookie mix
1/4 cup oil
2 Tbsp water
1 egg
1 cup chocolate ganache (see below) or you could use a pre-made frosting, but I think you can really taste the difference
1/3 cup mini marshmallows
chopped peanuts to top


Directions

Stir the mix, oil, water and egg with a spoon until combined. Press into an 8x8 pan. Bake 20 minutes or until just set. Cool completely. Stir together the frosting and marshmallows, spread over the bars and sprinkly with nuts.
