Favorite Garlicky White Bean Dip

Why I Love This Recipe
Mmmm! This is my favorite snack and appetizer. I like to call it Italian Hummus. It's so easy and goes together in about 4 minutes using a food processor. It's so good for you too.
Ingredients You'll Need
15 oz can cannellini beans (white kidney beans)
2 Tbsp lemon juice
1/2 cup olive oil
1 garlic clove (or a Tbsp chopped)
Fresh Basil Leaves (optional)
salt and pepper
Directions
Throw everything in the food processor until it's smooth.
When I have a bumper crop of basil I look for lots of ways to use it up.
Throw a few big leaves into the food processor with everything else, it adds a nice herbaceous note.
Add salt and pepper to taste.
If you want it thicker, cut back the oil, it you like it smooth add more oil.
This is awesome with good pita bread, especially with Baked Herbed Pita Wedges (see my recipes). Also makes a great dip for a veggie crudite.
