Garlicy bread soup

Why I Love This Recipe
If you are a garlic fan (and who isn't?!?) you will love this simple SUPER garlicy bread soup...
Ingredients You'll Need
2 Tablespoons of extra virgin olive oil.
2 cups of chopped onions.
1/4 cup of finely chopped garlic.
1 Bay leaf.
Pinch of crushed red pepper.
2 quarts of chicken stock.
2 cups of diced day old French bread.
1/2 cup of heavy cream.
1/2 cup of grated Parmigiano cheese.
1 Tablespoon of finely chopped fresh parsley.
Directions
In a large saucepan on medium heat add the olive oil, onions, garlic, and crushed red pepper. Saute the onions until transparent but NOT browned. Add the chicken stock. Bring to a boil, then reduce heat to a simmer.
Turn up the heat and whisk in the cream and the bread. Continue whisking until the bread has dissolved into the soup, about 10 minutes. With a hand held blender puree the soup until smooth. Whisk in the Parmigiano cheese and season with salt and freshly ground black pepper. Ladle into bowls (I like bread bowls) and garnish with parsley.
