Company Onion Pie
This is wonderful for company, but do treat your family with it too. It's rich, so cut in small slivers to serve.
Ingredients You'll Need
10 inch pie shell
3 cups sliced onions
3 tablespoons butter or margarine
3/4 cup milk
1 cup small curd cottage cheese
1 cup sour cream, not low fat
1 teaspoon salt
1/8 teaspoon Lemon Pepper
3 eggs, beaten
1 tablespoon flour
1/4 cup milk
1/2 cup grated sharp cheddar cheese
Directions
Heat oven to 425°. Bake pie shell just until it begins to brown, about 8 to 10 minutes. Set aside. Reduce heat to 350°. Cook onions in butter or margarine until tender and light golden brown. Spread in pie shell. Combine 3/4 cup milk, cottage cheese, sour cream, salt, pepper, and eggs. Blend well. Pour over onions. Combine flour and 1/4 cup of milk thoroughly. Drizzle over pie. Scatter cheese evenly over the top. Bake until the center is set and top is lightly browned, about 30 minutes.
