Halloween Eyeballs
Why I Love This Recipe
The kids just love these at school. Well, almost as much as the parent helpers!
I don't remember where I got the idea - saw it somewhere - but they sure are yummy!
Makes about 5 dozen.
Note: These are 'revised' Buckeyes. To make Buckeyes, simply dip the ball of peanut butter ball almost all the way in milk chocolate, leaving a small part of the peanut butter showing.
Ingredients You'll Need
1-1/2 cup peanut butter
2-1/2 cup powdered sugar
1/2 cup softened butter
1 teaspoon vanilla
white chocolate for melting and dipping (I use Wilton's)
mini M&M's (I use the green ones)
red and black icing gel
Directions
Mix peanut butter, sugar, margarine and vanilla until smooth. Shape into bite sized balls. Place balls on wax-papered covered cookie sheet. Freeze 1 hour. Dip into melted chocolate and place back on wax-paper to cool. Before they cool, place an M&M on the top. You can refrigerate these for 10 minutes to speed the cooling process. After they're cooled, make squiggly lines from the center of the ball down the sides to look like veins and add a small drop of the black icing gel to the center of the M&M.
