Ham Rolls

Why I Love This Recipe
I have always thought that this is kinda an odd recipe but it is fairly simple and sooooo tasty, probably not very healthy or good for you though.
My friend Laurens mom has been making this recipe for years, it was one of our favorites growing up and I still make it once in a while just for fun and we love the taste.
Ingredients You'll Need
2 cans Kerns Apricot Nectar Juice
1 1/2 Tbs. Dijon Mustard (the kind without the grains in it)
3/4 tsp. Salt
1 1/2 cups Minute Rice
3 Tbs. Chopped Parsley
1 1/2 Tbs. Butter
1 pkg (12 slices) Carl Budding Ham
1 1/2 Tbs. Log Cabin Maple Syrup
Directions
Combine 2 cups juice, mustard and salt.
Bring to Boil.
Stir in rice, cover, and simmer for 5 minutes. Meanwhile, lay out ham slices on a flat surface.
Remove rice from heat, add parsley and butter and mix.
Spoon rice onto top of ham and wrap ham up around rice.
Combine remaining nectar and syrup in a large shallow skillet.
Bring to simmer and then add ham rolls.
Simmer over low heat for 5 minutes and then serve with the extra rice on the side.
Pour the sauce from the skillet over the rolls and/or rice.
Garnish with extra parsley if you so desire.
