Ham with Red Eye Gravy
                      Why I Love This Recipe
As the legend goes, Andrew Jackson once asked his whiskey-drinking cook to "bring some ham and gravy as red as your eyes." And that's how the pan gravy from country ham was named. How true that story is I don't know, but what is 100% true about Ham with Red Eye Gravy that it is a breakfast staple in all Southern States. This recipe we found in America a Regional Cookbook by Mary Brandt Kerr.
Ingredients You'll Need
                                     2 Tablespoons butter
                    
                                     4 large ham steaks
                    
                                     1 cup strong black coffee
                    
                               
Directions
Melt butter in a large heavy skillet and add ham steaks. Fry until browned on both sides, about 10 minutes. Remove ham and set aside. Add coffee to drippings in skillet and cook for 3 minutes, stirring constantly to scrape and dissolve pan deposits. Pour gravy over ham. Serve with grits. Yield 4 servings.
