Hearty Vegetable Beef Soup
Why I Love This Recipe
I was looking for a vegetable beef soup recipe and came across this web page. I didn't like any of the recipes that were already published so I merely improvised and came up with this recipe. Hope y'all like it!
This nutritious soup is an all "scratch" (except for the bullion and noodles) recipe! To start you will need to make your base stock. This can be made days ahead and put into the freezer until needed or you can make and use it right away!
Ingredients You'll Need
1 large beef bone w/some meat on it plus extra pieces of roast, steak or stew meat which has not been cooked
3 Tbs beef bullion
5 crushed cloves garlic
1 medium onion cut into quarters leaving outside skin on (this gives a nice color to your broth)
2 ribs celery w/leaves cut into 3" pieces
2 carrots cut into 3" pieces
1/2 tsp black peppercorns
1/8 tsp leaf oregano
1/4 tsp sweet basil leaves
1/8 tsp thyme leaves
2 medium bay leaves crushed
1/2 C chopped parsley
2 medium diced potates
3 medium tomatoes cut into eights, be sure to slip skins
3 large carrots cut into 1/2" pieces
3 celery ribs cut in half lengthwise then cut into 1/2" pieces
2 large onions diced
5-6 leaves cabbage cut into 1" pieces
1/2 C chopped parsley
8-9 green onions cut into 2" lengths (be sure to use both green and white parts)
5-6 diced mushrooms (optional)
1/2-1 C green beans cut into 1" pieces
Salt & pepper to taste
1 3/4 C wide egg noodles
Directions
Simmer above ingredients, except for the noodles, for at least an hour or until potatoes and green beans are tender. Add noodles and simmer for an additional 15 minutes. You may also add other vegetables such as whole kernel corn, parsnips, etc. being careful not to add too much of any one thing. Serve this great soup with fresh hot rolls and butter.
