Island Rice
                      Why I Love This Recipe
Ingredients You'll Need
                                     2 1/2 cups water
                    
                                     1 cup uncooked long grain brown rice
                    
                                     1/2 cup chopped dried pineapple
                    
                                     2 tsp butter
                    
                                     1/2 tsp grated lime rind
                    
                                     1/4 tsp salt
                    
                                     1/4 cup chopped fresh cilantro
                    
                                     1 tbps chopped green onions
                    
                                     2 1/2 tbsp fresh lime juice
                    
                               
Directions
Bring 2 1/2 cups water to a boil in a medium saucepan; add rice and next 4 ingredients (rice through salt). Cover, reduce heat, and simmer 20 minutes or until liquid is absorbed. Remove from heat; stir in cilantro, onions, and juice.
Yield 6 - 1/2 cup servings.
