Key Lime Pie Bread Pudding

Why I Love This Recipe
Having lived in both South Florida and South Louisiana I decided to try to merge two classic recipes together into one using key lime juice instead of evaporated milk to create this heavenly dish.
Cheat? To save time you could just buy a frozen Key Lime Pie (I say choose Edwards as it's pretty faithful to the original recipe), let it thaw out and then fold it into the mixture.
You may also want to add Graham Cracker Crust Pieces on the top or folded inside of the dish to add the 'pie' effect.
Ingredients You'll Need
2 cups soy milk
1/2 cup firmly packed brown sugar
1/3 cup sugar
1 tsp. vanilla or vanilla extract
1/4 tsp. ground cinnamon
3 egg whites
1 whole egg
1/2 bottle key lime juice
1 loaf stale French Bread or similar
Option: Top off with Graham Cracker Crust Crumbs
Directions
Combine first 9 ingredients in a large bowl; stir well.
Add bread; toss gently.
Let mixture stand 1 hour.
Spoon mixture into a 10 x 7-inch baking dish coated with non-stick cooking spray.
Bake at 350 degrees for 35 minutes or until pudding is set.
