Kielbasa Diner

Why I Love This Recipe
My daughter gave me this recipe just a few weeks ago. It was her own concoction and my hubby and, after I doctored it up some, hubby, son and I loved it.
Ingredients You'll Need
1 pkg. Kielbasa, sliced into small rounds
4 med. potatoes, pared and sliced into rounds
1/2 cup sliced carrots
1 can diced tomatoes, drained
1 can green beans, drained
Directions
Place Kielbasa, potatoes and carrots into large sauce pan with 2 tbsp. oil. Cover and cook over med. low heat until potatoes and carrots are soft and Kielbasa is slightly browned. If mixture starts to stick or scorch, add about 1/2 cup water. Add tomatoes and green beans and simmer until heated thoroughly.
Good served while hot or warmed over.
My daughter only uses the Kielbasa and potatoes and that's good but the veggies make it almost like a gumbo.
