Why I Love This Recipe

Pate kode can be made with any of your choice of fillings which include herring, hot dogs, eggs, etc. I’m made one of the most popular one and my favorite as well; herring with eggs. Sometimes, I like to put hot dogs but didn’t have any in the freezer. I barely make these patties cause it is really time consuming. You could say strenuous too lol. Anyway, these bad boys were served with my juicy, delicious jerk wings. My nephew could eat chicken wings all day long. Thought he wouldn’t eat these because of the “spicyness”; but nope!! He devoured them and asked for more!!

They’re great for a game night, potlucks, etc...

Ingredients You'll Need

Pate kode:
3 cups flour
1 tsp baking soda
1 tsp salt
1 cup water
Herring
Bell peppers
Onions
Boiled eggs
1 tbs tomato paste
2 tbs butter

Jerk Wings:
10oz Walkerswood Jamaican jerk sauce (mild)
2 tbs épis
1 tbs browning sauce
1 lb wings
Vinegar
Salt
Lime

Directions

For the dough, Mix flour, salt, baking soda and butter with water in a bowl. Knead the dough with your hands until it becomes elastic. Rest for about 25-30 minutes
Boil the herring for at least 20 minutes
Chop onions, bell peppers
Heat your oil in a skillet
Add the tomato paste; then, drop the herring in the hot oil and fry for a few minutes with the tomato paste
Add the chopped ingredients for a few minutes just long enough for the onions to become translucent
Roll the dough on a floured surface
Add a spoonful of prepared herring
Fold it in half and press the edges to make sure both side stick together
Heat oil in a deep fryer
Fry the patties until golden

Jerk Wings:
Put the wings on a bowl, then, add salt vinegar and lime. Let it for 2 hrs
Rinse the wings and pat dry
Add the wings back in the bowl, then, add épis, jerk sauce and browning sauce. Marinate very well. Leave it overnight
Remove the wings from fridge and let it for 1 hr before cooked
Preheat oven to 290 degrees
Place wings on a baking pan and baked for 1 hr 10 minutes
The first 35 minutes, remove from oven and flip to other side
Then, bake for another 35 minutes
