Molten Chocolate Walnut Cupcakes

Ingredients You'll Need
1 12 oz. bag semi-sweet chocolate chips
1/4 cup water
2 cups all-purpose or cake flour
1 tsp. baking powder
1/2 tsp. baking soda
pinch salt
1 cup sugar
1/2 cup light brown sugar
1/4 cup butter or margarine, room temp.
1/4 cup milk or soymilk
1 tsp. vanilla
1 egg
1 egg white
1/2 cup walnut pieces
Directions
Preheat oven to 350F. Line muffin pan with baking cups.
Put 1/2 of the chocolate chips and the water in a bowl and set over a pan of almost simmering water.
Heat until melted, stiriing. Remove from heat and let cool.
Sift flour, baking powder, soda, salt and sugars into a large bowl.
Add chocolate mixture, butter, milk and vanilla.
Beat until smoothly blended. Add eggs and beat two more minutes.
Stir in walnut pieces and remaining chocolate chips.
Divide batter into the pan, filling each cup to 1/8 in. from top.
Bake 20-25 minutes, or until you can see hardened chocolate on the top of the cupcakes
(Inserting a toothpick will not indicate whether or not the cupcakes are done because
insides will be gooey due to the melted chocolate chips).
Let cool for ten minutes and frost with chocolate cream cheese frosting, or frosting of your choice.
