Mom's Bolognese Meat Sauce - Jason's Favourite

Why I Love This Recipe

A recipe from a Mother to her son


Ingredients You'll Need

2 tablespoons butter
2 tablespoons olive oil
1/2 medium-size onion, finely minced
1 small carrot (2 of you wish sauce to be sweeter)
1 small celery stalk
1 pound ground beef or veal
1 cup dry white wine
3 cups crushed Italian tomatoes
1 cup chicken broth
3 tablespoons milk
1/2 teaspoon cayenne peppers
Salt and pepper


Directions

Heat the butter and oil in a skillet over medium heat.


Add the onion, carrot and celery, stirring until soft and golden but no brown.


Add the meat and cook, stirring to break up the meat, until the meat is slightly browned.


Add wine and cook until almost all is reduced.


Add the tomatoes, broth and milk and season with salt and pepper.


Cover the skillet and cook over low heat at least one hour, stirring a few times. When done the sauce should have a medium-thick consistency. If too dry, add a bit more broth.


Serve over cooked pasta or cool and freeze.


For added flavour, stir in 2 ounces pancetta (Italian bacon) at the same time as the meat.


This sauce may also be used to make Lasagna

This recipe can be made in bulk, frozen in 1.5 cup / person portions and served every night. That's my opinion anyway.
