My Favorite Potato Soup

Ingredients You'll Need
1/2 pound bacon, diced
14 medium potatoes, diced
1 carrot, diced
4 cups water, or just enough to cover potatoes
1 1/2 tablespoons salt
1 teaspoon black pepper
1/2 teaspoon garlic powder
1 (10-ounce) package frozen small peas
1 quart half and half cream ( I use fat-free)
1 bunch green onions, thinly sliced
Directions
Brown bacon in large soup pot. Remove and drain bacon on paper towel. Add diced potatoes, carrots, water, salt, pepper and garlic powder to the bacon fat. Cook at medium temperature until potatoes are tender. Stir occasionally as potatoes will make the mixture thicker as it cooks. Turn off heat. Mash the potatoes slightly. Add the peas and let set for 5 minutes. Stir in half and half cream, chopped green onion and bacon. Stir. Turn on heat and continue cooking on medium heat for about 10 minutes, stirring often. Do not boil. Adjust seasonings to taste. Serve while hot.
