Old Fashioned Turkey Pan Pie

Ingredients You'll Need
1/2 cup diced carrot
1/2 cup diced celery
1/2 cup diced butternut squash
1/2 cup peas
3/4 minced onion
1/4 cup AP flour
3 tbs heavy cream
2 cups chicken or turkey broth
1/4 tsp herbs DE Provence or similar seasoning mix
2 cups diced turkey meat, white or dark
salt & pepper to taste
Directions
In a wide, roasting dish, saute in butter all vegetables except peas for 5- 7 minutes, over medium-high heat.
Lower flame to low, add flour, stir well and cook it without burning it :) for another 2 minutes. Add broth, seasonings, peas and turkey. Season with salt and pepper to taste. Add cream, turn off flame, and mix well. It should have become very thick, if not add more flour after dissolving it in a little cold water. It needs to be rather thick. Cover top with puff pastry or better yet, hand made pie dough. Bake for 25 minutes or until top is golden brown.
