PARMESAN GARLIC BROILED TOMATOES

Why I Love This Recipe

Have you got a bumper crop of tomatoes from your garden? This is a nice change from plain sliced tomatoes.


Ingredients You'll Need

1/2 cup grated Parmesan cheese
1/2 cup Hellmann's Flavours Garden Herb Mayonnaise
1/4 cup finely chopped onion
1 clove garlic, minced
4 medium tomatoes


Directions

In the container of a blender or food processor, combine the mayonnaise, Parmesan, chopped onion and garlic.


Blend until the mixture is creamy but still retains a bit of texture.


Cut the tomatoes in half crosswise, making sure that each half will sit flat on a baking sheet, cut side up.


If necessary, you can take a thin slice off the bottom so that it doesn't wobble.


Scoop out a little bit of the inside of the tomato, then top with about 1 tbsp. (15 mL) of the mayonnaise mixture, spreading it to cover the cut side.


Place tomatoes under a preheated broiler - about 4 inches (10 cm) from the element.


Broil until topping mixture is nicely browned and bubbling - about 5 minutes.


Make this when tomatoes are in season and exploding with flavour.


It's the perfect side dish to serve with grilled chicken or fish.
