Pasta with Pumpkin Bacon Sauce

Why I Love This Recipe

A perfect dinner for fall when you are craving a hearty dish. This is easy to prepare, quick, and packs terrific flavor. It's always been a huge hit with my guests. Enjoy!


Ingredients You'll Need

1 1/4 cups canned pumpkin puree
1 lb pasta(rigatoni or penne works great)
8 oz thick pepper cut bacon diced
3 gloves garlic chopped fine
1/2 cup heavy whipping cream
1 tablespoon flat leaf parsley
1 cup Parmesan (fresh grated is best!)
Fresh Ground Pepper


Directions

Cook pasta in salted boiling water until al dente and then drain.


While pasta is cooking prepare the sauce. Cook bacon with garlic until crisp and then drain fat. Place the bacon-garlic mixture on paper towels to remove excess fat.


In a saucepan slowly add heavy whip cream to the pumpkin puree until it's combined. Add the bacon- garlic mixture and parsley and warm over low heat. Season with pepper.


Add 3/4 cup parmesan to the drained pasta and stir. Then add the sauce and toss. Serve with remaining fresh parmesan cheese sprinkled over the top.


Serve with salad and a good quality bread as you will want to get every ounce of the sauce!
