Peanut Butter Cookies
Why I Love This Recipe
I was kind of surprised at just how many vitriolic posts there were against recipes for cookies made with all-natural peanut butter. Who's twisting your arm? The whole point of cooking is to create something your way. The boys taste tested these and pronounced them delicious.
Ingredients You'll Need
1 cup unsalted butter, softened
1 cup sugar
1 cup packed brown sugar
2 large eggs, at room temperature
1 teaspoon vanilla
1 cup all-natural peanut butter, at room temperature
3 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon salt
Directions
Preheat the oven to 375 F. Cream together the butter and sugars until light and fluffy, about 5 minutes. Beat in the eggs, 1 at a time. Add peanut butter and vanilla and beat until combined. In a small bowl, whisk together the dry ingredients then gradually add to the peanut butter mixture until all is evenly incorporated. Drop spoonfuls onto a cookie sheet spacing about 2 inches apart. Press a crosshatch pattern into the cookies with a fork dipped in water. Bake 11 minutes or until edges just begin to brown. Transfer to a wire rack to cool. Makes about 3 dozen cookies.
