Chicken Burrito Bowls

The chicken burrito bowls are a super healthy option for the main dish, with very refreshing flavors in the bowl.
Ingredients You'll Need
1 Tablespoon olive oil
1 clove garlic, chopped
4 cups cauliflower rice
1/4 cup scallions, chopped
1/4 cup cilantro, chopped
1 Tablespoon lime juice
1 1/4 pounds ground chicken
2 Tablespoon taco seasoning
2 cups frozen corn, defrosted
1 tub of sour cream
1 bag of Mexican cheese blend
1 head of lettuce
Directions
1. Heat 1 teaspoon olive oil in a large, non-stick saute pan. Add garlic and a pinch of salt.
2. Add rice to the pan and cook until fragrant and tender. Transfer to bowl and allow to cool before stirring in scallions, cilantro, and lime juice.
3. Heat a large saute pan over medium heat, add in remaining oil and ground chicken. Season with salt and pepper & break into crumbles.
4. When the chicken has turned translucent to opaque, add taco seasoning and stir to coat the chicken. Cook chicken thoroughly.
5. Once ingredients are prepped, assemble your bowls with the rest of the ingredients.
