This cake is super moist and has such a great apple flavor that pairs well with the coffee cake.
Ingredients You'll Need

2/3 cup all-purpose flour
1/2 cup whole wheat flour
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon salt
1 1/2 cups finely chopped, peeled apples (2 small)
1/4 cup refrigerated or frozen egg product, thawed
3/4 cup granulated sugar
1/4 cup chopped pecans or walnuts
1/4 cup packed brown sugar
1 Tablespoon all-purpose flour
1 Tablespoon whole wheat flour
1/2 teaspoon ground cinnamon
1 Tablespoon margarine
1/4 cup chopped pecans or walnuts
Directions
1. Lightly coat a 9-inch round baking pan with cooking spray; set aside. In a small bowl stir together the 2/3 cup all-purpose flour, the 1/2 cup whole wheat flour, baking soda, 1 teaspoon cinnamon, and salt; set aside.
2. In a large bowl combine the apples and egg product; stir in granulated sugar, 1/4 cup nuts, and applesauce. Stir in flour mixture. Pour batter into prepared pan.
3. For the topping, stir together brown sugar, the 1 tablespoon all-purpose flour, the 1 tablespoon whole wheat flour, and the 1/2 teaspoon cinnamon; cut in margarine until mixture resembles coarse crumbles. Stir in 1/4 cup nuts. Sprinkle topping over batter in pan.
4. Bake in a 350-degree oven for 25 to 30 minutes or until a wooden toothpick inserted near the center comes out clean. Cool in pan for 10 minutes. Serve warm.
