Peppery Beef And Noodles
Why I Love This Recipe
This recipe came from a book put together by my childhood church. It is super easy and quick, and best of all my 6 year old ate it up.
Ingredients You'll Need
12 oz Whole wheat pasta (I prefer rice noodles)
1 c Water
1/2 c Soy Sauce
4 Tbsp Cornstarch
1 tsp Black Pepper
1/4 tsp Red Pepper
Honey and Lemon to Taste (optional)
2 cloves Garlic, minced
2 c fresh or frozen Pea Pods, halved crosswise
1 c sliced Green or Red Bell Pepper
1 c sliced Mushrooms
2 Tbsp oil (I like olive or sesame)
2 Lbs Lean Boneless Beef
Directions
Cut beef into bite-size strips. Set aside. Cook noodles as directed, and keep warm until served. In a small bowl, stir together water, soy sauce, cornstarch, black pepper, red pepper, honey, and lemon. Set aside. Coat wok or large skillet with cooking spray or a small amount of oil, heat over med-high. Once hot add garlic; Saute for 15 sec. Add pea pods and green peppers, cook for 1 min, add in mushrooms, and continue cooking for 1-2 min. Remove vegetables and set asid. Heat 2 Tbsp oil in pan. Stir Fry beef in hot oil until done. Once done move beef to the sides of the pan and add sauce, stir constantly until thickened. Add vegetables back into pan, stir all ingredients until hot and serve over
noodles.
