Pig in the Poke
Why I Love This Recipe
My mother used to make this for dinner in the 1940's, but I think it's probably supposed to really be for breakfast.(She also made waffles for dinner, so what did I know!) It's kind of like a pop-over. We used to put butter and maple syrup on it.
We don't have any real ETHNIC background (mongrel, mostly) but this was a recipe I grew up thinking was perfectly normal and something everybody else ate. So I guess a heritage recipe in my family was one like this passed down from Depression Times.
