Why I Love This Recipe
Since tomorrow is Lei Day in Hawaii, which has been celebrated in Hawaii since 1928 I thought I would share this simple but onolicious dessert. I found this recipe in Sam Choy's Wonderful World of Hawaiian Cuisine. Sam has been cooking since he was a boy helping his father cater huge luau on the North Shore of Oahu. His father, being of Chinese ancestery, taught him the secret techniques of Oriental cookery, while he learned the Island ways and European traditions from his Hawaiian-German mother. Sam earned a degree at Kapi'olani Community College, which has a great Culinary Art program, prior to opening his first Sam Choy's Restaurant in Kona in 1991.

6 cups canned or fresh coconut milk
1 cup cornstarch
1 cup sugar
1/2 teaspoon salt
1 cup crushed pineapple
