Vegetable Pasta Soup

This pasta soup is a great way to get lots of nutrients in a simple and easy to make recipe.
Ingredients You'll Need
2 cups chopped onion
2 Tablespoon olive oil
1 cup diced carrot
1 cup minced celery
1 teaspoon salt
1 teaspoon oregano
1/4 teaspoon pepper
1 teaspoon basil
1 cup cubed zucchini
2 16 ounce cans of tomatoes
3 cups of water
1 16 ounce can great northern beans, drained
3/4 cups uncooked pasta
1/4 cup chopped fresh parsley
Directions
1. In a soup kettle, saute onions in olive oil until they are soft, about 5 minutes.
2. Add carrot, celery, salt, oregano, pepper, and basil. Cover and cook over low heat for 5 minutes.
3. Stir in zucchini, tomatoes, water, and beans. Cover and simmer gently for 30 minutes.
4. Heat soup to a boil.
5. Add pasta and boil until tender, about 10 minutes.
6. Stir in parsley and serve.
