Pulled Turkey Sandwiches

Why I Love This Recipe
Someone gave me a boned turkey years ago and at the time I just wasn't sure what to do with it. I needed something for an informal gathering, and something I could do in the crock pot, and came up with this pulled turkey recipe. It is messy to eat, but oh so good!
Ingredients You'll Need
1 boneless turkey (string removed and cut into four chunks), or, a turkey breast and hefty package of thighs (ask the butcher counter to do this for you)
1 can cream of mushroom soup (regular or low fat-low sodium work equally well)
1 diced onion
1 diced rib of celery
2 cloves garlic
Pinch of dill weed
1/2 tsp Tabasco
Kaiser rolls (or hamburger buns/bread of choice)
Grated cheese and fresh onions (optional)
Directions
Wash turkey and pat dry
Place in crockpot
Spread cream of mushroom soup over the top of the turkey
Add diced onion, celery, garlic, dill weed and Tabasco
Cover and cook on high for at least 8 hours, or on low for at least 10 hours
Prior to serving, using two forks, rake across the turkey, until the meat has been shredded (do not remove turkey from crock pot to do this)
Place shredded turkey on Kaiser rolls and if desired add grated cheese and fresh onions
Note: leftovers are great reheated on rice or as a starter for a super turkey soup
