Rhubarb Cake

Why I Love This Recipe
Ingredients You'll Need
1/2 cup butter
1 1/2 cups sugar
2 eggs
3 cups flour
pinch of salt
4 tsp baking powder
1 cup milk
1 tsp vanilla
4 cups of rhubarb
1 3 oz pkg strawberry jello
2 tbsp sugar
Topping:
1?4 cup flour
1/2 cup sugar
3 tbsp melted butter
1 tsp cinnamon
Directions
Cream butter and sugar. Beat in eggs. Combine flour, salt and baking powder in a bowl. Stir vanilla into milk. Stir dry ingredients into the butter mixture alternately with milk and mix well for a stiff cake batter. Smooth batter into a greased 9 X 13 pan. Mix jello powder and sugar and combine with rhubarb. Spread over batter.
Crumble topping ingredients together and sprinkle over top of rhubarb mixture. Bake at 375 F for 35 to 40 minutes.
Notes: This makes a very moist and delicious cake that rises high and is good warm or cool. I served it warm with ice cream
