Why I Love This Recipe

This is the only way we ate rice growing up...unless we were eating asian food when plain white, steamed rice was sufficient!

If you are using an electric stove, it is even better to put rice in 350degree oven, in pot with lid. Oven has more even distribution of heat, than an electric oven.

Recipe is easily doubled, tripled, etc. The more rice you are cooking, if you are not using a rice cooker, I suggest the oven method regardless of your stove. For each cup of rice add an additional 10 minutes to the orginal 20 minute cook time.

This is a great base to any rice casserole, spanish rice (change out water for spicy tomato juice), or for added flavor just substitute chicken stock for water. You can also add chopped veggies before you cover and simmer, to make a nice side dish...cooking time will need to be adjusted slightly...but it is very versatile!


Ingredients You'll Need

1 cup rice (we used Mahatma brand growing up but I use jasmine rice as an adult)
1/3 stick butter
2 cloves garlic, chopped
1/2 onion, chopped
1/2 bellpepper, chopped
2 cups warm water
Lawry' seasoning salt, to taste


Directions

On med-high heat, in a pot with a tight fitting lid (or I prefer to just use the rice cooker), saute veggies in butter, add rice until rice is "popped"/opaque.


Add water, stir well and season with Lawry's.


Cover. Lower heat to simmer. DO NOT lift the lid for 20 minutes or rice will be sticky! Check rice at 20 minutes to be sure all liquid is dissolved....it not cook for a few more minutes.
