Sesame Pork Fajitas

Why I Love This Recipe

Spicy, but my family likes it that way, and yet again this is a keeper because the whole family eats it, which is very rare in this household. Also this is a great middle of the week recipe because it really only takes 30 min. or even less if you put the meat to marinate before work.


Ingredients You'll Need

1 lb pork, cut into thin strips
2-3 tsp dark sesame oil
1 tsp ginger, fresh is best, just peel and grate
1/4 tsp salt
1 tsp red pepper paste, or substitute 1/2 tsp red pepper or so to make it less spicy
2 garlic cloves minced
1 red pepper, sliced thin
1 c onions, sliced thin
4-6 tortillas, or moo shu shells
sesame seeds (optional)
hoisin sauce


Directions

Combine 2 tsp sesame oil, ginger, salt, red pepper paste, and garlic in a ziploc bag, add pork, seal and shake to coat. Let it marinate for about 20 min. While it marinates, use remaining oil and cook red pepper, and onion in a large skillet. Once onion is translucent, remove and set aside. Over medium high heat cook pork, once it's done add vegetables and sesame seeds and mix. Serve in warm tortillas, or moo shu shells, with a dollop of hoisin sauce. Makes 4-6 servings.
