Why I Love This Recipe
I have no idea what the name means or where it originates. A friend passed this on to me, so I will do likewise!
Ingredients You'll Need
1 RED BELL PEPPER
1 GREEN BELL PEPPER
1 YELLOW BELL PEPPER
1 LARGE YELLOW ONION
1 TBL. COOKING OIL
1 PACKAGE SWEET ITALIAN SAUSAGE LINKS
1 PACKAGE HOT ITALIAN SAUSAGE LINKS
1 (14-1/2 OZ.) CAN DICED TOMATOES
Directions
SLICE PEPPERS IN STRIPS, AND THE ONION IN ROUNDS.
IN A LARGE SKILLET, HEAT THE OIL AND ADD THE PEPPERS AND ONIONS, SWEATING THEM DOWN AND BROWNING SLIGHTLY.
REMOVE MIXTURE TO A SLOW COOKER.
IN SAME SKILLET, BROWN THE SAUSAGES.
AFTER BROWNING, SLICE SAUSAGES INTO COINS AND ADD TO SLOW COOKER.
POUR THE UNDRAINED TOMATOES OVER ALL AND STIR TO COMBINE.
COOK FOR 6 HOURS ON LOW.
CAN BE SERVED OVER WHITE RICE, OR AS A SANDWICH, IN A HOAGIE ROLL.

Slumgullion was traditionally a thin stew of meat and vegetables
...a dish prepared by stewing (especially) meat or fish with vegetables.
Probably Irish on origin... loose translation = muddied water.
Slumgullion has been modified by home cooks over the years to suit their family likes and needs. Many are no longer watery...and many contain a lot of ingredients. Macaroni and beef is called Slumgullion in some households.
