Sophia Loren's Pasta
Why I Love This Recipe
I found this recipe in the Pittsburgh Post-Gazette. Supposedly it originated with Sophia Loren. It's very easy and tasty.
Ingredients You'll Need
4 slices thick-cut smoky bacon, diced in 1-inch pieces
1 large shallot, diced
2/3 pound chicken tenders, cut into bite-sized pieces
28-ounce can diced tomatoes, with basil, garlic and oregano
Salt and pepper
2/3 box pasta of choice
Parmesan cheese
Directions
Put water on for pasta.
Over medium heat, sauté bacon and shallots in 10-inch frying pan until bacon is softened but not browned, about 5 minutes.
Add chicken and saute 5 minutes more. Add tomatoes, undrained, and bring to a boil. Reduce heat and cook 5 minutes, covered. Remove cover, stir and cook an additional 5 minutes. Salt and pepper to taste. Serve over cooked pasta and pass the Parmesan. Serves 4.
